Fall Harvest Luncheon: Celebrating St. Francis and the Impact of Vegetarian Eating

food In honor of the Feast of St. Francis of Assisi, the Patron Saint of the Environment, students, faculty and staff are invited to a special Fall Harvest Luncheon at 12:30-2 p.m., Friday, October 4, in Bethany Hall.  RSVP here.

This free event will offer delicious vegetarian dishes along with a discussion about the significant impact that plant-based eating can have on both personal health and environmental sustainability.

The luncheon aligns with Seton Hall's sustainability efforts and the "Food Matters: Mindful Eating" project. It underscores the importance of making food choices that contribute to the well-being of our planet.

The event will include a short interfaith prayer service, reflecting the spirit of St. Francis, who was named the Patron Saint of Ecology by Pope John Paul II in 1979. "As a friend of the poor who was loved by God's creatures," John Paul wrote, "Saint Francis invited all of creation – animals, plants, natural forces, even Brother Sun and Sister Moon – to give honor and praise to the Lord.”

Professor Emerita Judith C. Stark, Ph.D., whose specializations include Augustinian theology and philosophy, feminist theories, and environmental issues, will give a presentation on the evolving landscape of vegetarianism. Stark will share experiences and insights gained from her life as a vegetarian for more than 50 years, a period that has seen vegetarianism move from a niche dietary choice to a mainstream lifestyle.

Students involved with environmental activism on campus will talk about their work and opportunities for students to get involved in efforts to address climate change.

It promises both a taste of inspired vegetarian dishes and discussions about how individual and collective actions can advance environmental sustainability.
